In this process, which preserves the physical and nutritional structure of the ration, the product is cooled gently and homogeneously by drawing air through the fan. The circulation is uninterrupted; the hot product is continuously fed into the cooling chamber through the air lock.

This prevents pressure fluctuations and keeps the vacuum power in the system completely stable at all times.
